Food Matching Note :
Has the complexity, extract and acidity to match extremely rich savoury foods; Hungarian goose foie gras is a classic match. The wine has the fruitiness and freshness to match classic berry desserts like summer pudding, and the biscuity edge will also accompany pastry. Finally, this wine is perfect on its own. Its brightness, sweetness and light alcohol are an excellent match for the Sunday morning papers.
Tasting Note :
It is a medium amber colour, intense and complex note of orange and marmalade and spices. Very sweet and rich palate with fine cleansing acidity. Great length with a lovely acid finish.
Vinification Note :
The skill and traditions of producing Aszu wines have changed little since the 17th Century. Hand picked Aszu berries are macerated with top quality base wines.
Once the berries arrive at the winery, they are crushed, and the syrupy aszú paste is added to each gonci (140-liter/37-gallon barrel) of base wine. The mixture is stirred repeatedly for two or more days to extract the natural sugars and aromas of the paste. The small casks are then stored in RTWC’s 13th century cellars, originally dug out in defense against Turkish invaders. Here, along the moss- and mold-covered walls, is where a second fermentation takes place – a process that is caused by the addition of the aszú paste and one that can take several months to several years, due to the cold cellar temperatures and the high sugar content of the wine.
Careful pruning in the 1st and 2nd Growth vineyards, hand picking and maturation for a minimum of 3 years in Gönci casks in 13th century cellars, ensure these rich, refreshing wines that are of the highest quality.
