Food Matching Note:
Pair this wine when you need concentration with a cleansing zip of acidity and clear, well presented fruit. Lamb, duck, pheasant and pork will all benefit.
Tasting Note:
The blackberry and black pepper nuances of Syrah, the leather and plum aromas of Merlot and the lifted red currant character of Cabernet Franc have combined to produce a complex, fruit dominated wine. The oak aging has added a further dimension to the wine without being obvious. Its richness with firm, ripe tannins make this wine extremely serious yet eminently drinkable.
Vinification Note:
Each grape variety was harvested and vinified separately. The grapes were destemmed prior to fermentation. Colour and tannin extraction was effected by gentle daily pumping over. The skin maceration was extended for some 4 weeks following fermentation. The individual wines were blended after 12 months barrel ageing in small French oak. No fining and only light filtration occurred before bottling.
