Food Matching Note :
More long-lived than most Beaujolais, will match nicely to one of the following: pasta with sun-dried tomatoes with olives and goat cheese, red-wine-braised duck legs with roasted pears and onions, roast five-spice duck with honeyed-mango chutney sauce or pork tenderloin with balsamic-cranberry sauce.
Tasting Note :
Morello cherry in colour with aromas of black cherry and fragrant, leafy aromas. Those black cherries come back on the palate and they're accompanied by juicey yellow plums spiced with some green tomato and herby flavours. Finishes firm and moreish.
Vinification Note :
Pierre Marie Chermette took over the running of the family domaine in 1982. Since then he has turned the place around by fusing some of the lost traditions of Beaujolais with a modern approach in the cellar. Chermette rejects the idea of excessively high yields, otherwise common in Beaujolais, which prevents the grapes from ripening properly. He instead prefers low yields, which, in turn means higher sugar levels and obviates the need to chaptalise. Chermette uses natural yeasts which confer a character of red fruits to the wine rather than the artificially prepared yeasts which lend the famous, but not such attractive character of bubble gum and banana. The size of this particular vineyard is 3 Ha with a south west exposure. The average age of vines is 30 years old. Density of vines 10 000 per Ha, with manual harvesting.
