Food Matching Note :
Crab with dill on cayenne toasts, cous cous and shrimp salad with tangerines and almonds or sautéed langoustine with Chardonnay reduction.
Tasting Note :
A deeply coloured rosé with a wonderfully expressive nose. A lively medium-body, balanced acidity and a fresh elegant finish.
Vinification Note :
Harvested at optimum ripeness, then taken to the cellar as quickly as possible. Here the grapes were crushed and inoculated with selected yeast. Fermentation occurred as for white wine with the free run juice being separated as soon as possible.
