Works well with warm jasmine rice salad with shrimp and Thai herbs, Chinese style steamed fish or oven-salmon fish in olive oil.
Tasting Note :
Made in an extremely modern style fresh style. Aromatic, with a good structure and fruit. An agreeable pronounced balanced acidity, tropical and citrus fruit character with a long finish.
Vinification Note :
Planted on limestone/ clay soils Density of between 3500-4000 plants per ha. Part of the vines are 25-30 years old, part six years old. Pressing after total destemming with exclusive use of free run juice. Fermentation temperature control to 16-18 degrees Celsius. Size of Vineyards: 20Ha Soils: limestone clay Harvest 1st week in September 80% manually and 20% mechanically harvested Fermentation temperature: 16°C to 18°C
