Food Matching Note :
An excellent partner for white meats, especially pork or rabbit, and can be paired with richly flavoured, textured fish such as tuna or swordfish steaks. Try it with soft white cheese, or as an interesting aperitif.
Tasting Note :
Bright brick red in the glass, with attractive ruby highlights. The nose is forward and fruit driven, overflowing with cranberry and raspberry fruits and a touch of green spiciness. The palate is medium bodied, soft and supple, with good acidity supporting vivid forest fruit flavours. The finish is elegant, dry and poised.
Vinification Note :
The grapes are sourced exclusively from La Madone vineyard, which is situated at the top of the southwestern slopes of the hillside looking out over the village of Fleurie. The soil is made up of pink granite that erodes into small pebbles, which suits the Gamay grape perfectly. Vinified partly by carbonic maceration (the technique of fermenting whole grapes without breaking their skins, therefore arresting the release of tannin) and partly in contact with the skins in stainless steel tanks, the wine is aged in very large oak foudres, which do not add oaky flavours but soften the wine. Best drunk within the first few years of vintage.
