Food Matching Note :
Seafood salad, fried cauliflower, pasta with bottarga (tuna roes), spaghetti with fresh clams, bavette with swordfish and mint, fried shrimps and squid rings.
Tasting Note :
Grecanico is a native Sicilian grape which produces a complex, aromatically defined white wine with lively citrusy fruit character on the nose and the palate, and well balanced, fresh acidity on the finish.
Vinification Note :
The grapes are picked from the bunch and delicately crushed. Afterwards, they are cooled off at a temperature of 8-10°C for 4 - 6 hours; then they are delicately strained with light presses; the juice obtained undergoes cold settling and fermentation at a temperature of 16-18°C with selected leavens. Refinement takes place in 6 months in bottles at a temperature of 18°C.
Detailed Vinification Note :
Mandrarossa Grecanico is cultivated with attentive care on the hills in Menfi and it is known as one of the most popular varieties in Sicily. It is an autochthonous cultivar capable of offering a characteristic fruit. This wine was produced thanks to the vine-dressers' carefulness and the specialised people's experience. It is also a distinctive wine because of its complexity and aroma which satisfy the most delicate palates. The grapes are picked from the bunch and delicately crushed.
