100%	Gruner Veltliner

Food Matching Note :
Gruener Veltliner goes well with cold hors d'oeuvres, pasta dishes, delicate salads or as a special aperitif.
Tasting Note :
Light greenish yellow, subtle mineral tones with smell of apricots. Fully ripened, delicate structure, strong extract with refined sweetness of fruit on the palate and creamy finish.
Vinification Note :
Austria national white grape, first planted in 1203 by the Cistercian Monks. Produced from the Kirchberg vineyard in close approximation to the Neusiedlersee. The south east facing slopes consist of slate-prime rock. The vines are planted at a density of 6000 vines per hectare. Manually harvested and selected grapes are transported to the winery, where the grapes are destemmed prior to being pressed by a membrane press. The juice is cooled to approximately 10°C. The juice is allowed to settle naturally for 24 hours before being racked off into stainless steel fermenters, where the grape juice is inoculated with cultured yeast. Fermentation was temperature controlled at 16°-17°.
