Tasting Note :
Bright gold in colour with youthfull flashes of lime green which indicate its fresh nature. On the nose this wine is clean, with an excellent presentation of primary fruit aromas consisting mostly of pineapple and citrus with hints of cut grass and minerals. The palate is light to medium bodied and dry, with good balancing acidity alongside its fresh fruit flavours and crisp finish. Easily approchable and thoroughly enjoyable.
Vinification Note :
Picking times are carefully controlled in order to maximise fruit ripeness and potential alcohols along with natural acidity and small, individual parcels are picked and fermented seperately. After crushing, the must is pneumaticaly pressed immediately into stainless steel tanks and left overnight to cold settle. The following day the juice is racked off the gross lees and innoculated with a controlled yeast strain, selected to enhance aromas and preserve fruit characteristics. After fermentation the wine is racked off the yeast lees and aged for a few months in steel tanks before selection, blending and bottling.
