| Excellent with rich seafood dishes, and white meat dishes, such as braised pork loin cutlets with thyme-lemon sauce or salmon with roasted asparagus and lemon-caper sauce. |
| Tasting Note : |
| Straw coloured with a complex nose of ripe, tropical fruit and a touch of honeyed richness. The palate is long and well balanced with excellent acidity and a rich fruity finish. |
| Vinification Note : |
| The grapes are all hand picked from Richard Hamilton’s own vineyards in the McLaren Vale. The wine is then cool fermented in steel with temperature control and finally matured in older French oak casks for a period of six months. This refines the wine, adding complexity and softening up the palate before a light filtration and bottling young for early consumption. |
