Delicious Burgundian Cassis (Blackcurrant) that turns white wine into nectar and does also make a delicious drink with a little sparkling water.
The classic "vin blanc cass", nowadays known particularly outside France as a 'Kir' (named after an ecclesiastical canon who was Mayor of Dijon and pioneer of the post war European twinning movement, who was perhaps too fond of the style!) is made with Bourgogne Aligoté.
The generally recommended proportions for the mix are between 8% and 10% Cassis and the rest crisp white wine. As well as Aligoté, Muscadet can also work well.
